Going to make southern red beans and rice with Andouille sausage.
I've never even had it. Just sounded good.

Well comrades,

Tis the season to harvest a pig. It just so happened that overnight, we do our family tradition of roasting a whole pig estilo Mexicano.

We selected a Berkshire heritage breed and reared it here on the farm. My abuelito came from Guadalajara to assist in killing of the pig.

Roasted overnight underground. And today just happens to be the day our beloved Rams play.

All vegetables were grown here on the farm, and my family has put together a beautiful array of hunger murdering food with beer from our local brewery and tequila we age ourselves in barrels.

Family, friends, food, and eventually football. Can't go wrong with that!

Tis a beautiful day, and may the Rams kick ass and represent their fans well.

Cheers !

Dude
God Bless you
Viva Rams!!!!!!

Just put some stl cut ribs on the bullet smoker. I'm going to try the 3-2-1 method. I'm mostly new to smoking. If anyone has tried this method or has tips for smoking ribs, it would be appreciated.

Hoping to be done right around game time.

Go Rams!!!
I prefer to crutch them for only an hour to 1 1/2 At the most.
Even at 200 Deg.
I prefer my ribs to bite clean off the bone, but not fall off the bone. Even if you plan to crutch them for the full 2 hours, I would check them half way through so they don't get mushy, which they can if the temps are hot enough.

Also. If your going low heat you can sauce them a full hour before pulling them. The sauce will set but not burn as it does on a grill.

A que hora cenarnos? I can make it in 4+ hours if I drive fast.

Just kidding, sounds awesome, traditional home cooked meals are great.

Pregaming with a beer and waiting for the buffalo chicken dip to melt and blend together.

I'm doing a smorgasbord . Have Chili done, plus cooking brats for chili brats. Hungarian Hot Wax poppers, naturally wrapped in bacon, but filled with cream cheese and colby jack. My world famous cheese dip with a variety of chips including corn chips and Frito's chili cheese.

That said, I need to cook for the next week.... Sooo, I'll have a bird or two roasting in the oven since we're playing the Falcons. Wish I had some quail or dove..

Beverage wise, I'll be drinking me some Kraftig and will have shots of Jager ready for when we score.

Hope all my ROD brothers and sisters have a great menu planned. GOOOOOOOO RAMS!

Heineken at the fire pit while I cook!

Bon apetit Rammers!

I prefer mine that way too by a long shot.......we should ask 503 how he makes his killer ribs..........

@RamFan503 what do you say?

Stuck working a gig in Pittsburgh... but im going to be able to watch the game ( good thing, didnt want to have to quit my job! jk)

What's the gig?

If you want wings find a Quaker Steak and Wings. It's a regional place and they know what they are doing with wings. Though it's been many years so who knows if it's changed.

I'm watching the game at my stepmom's house. She's cooking potato burritos. Probably sweet tea to wash it down.

Mebbe you should wait to post again until both of your balls have dropped. Leave your Guy Card at the door on your way out.

I am totally kidding and only say that because I know you have such a fantastic sense of humor.

So what is a potato burrito? And are you putting a little vodka in the tea?
