So I cooked that Ono my nephew caught last night... you can see a pic of it in the Fishing thread. Ono, aka wahoo, is one of the best fish you'll ever eat if it's cooked properly. The KEY is not to over cook it. I sear it just like ahi tuna so that it's basically rare in the middle. We ate a bunch of it raw before I got it on the skillet.

Since we're back home in The 808... I was able to get real Hawaiian ingredients for my marinade. I cut the fish into nice sized chunks and let them sit in this marinade for a few minutes before I seared them. Go about 2 minutes on each side... these were big chunks.

I also made some pineapple salsa with actual Hawaiian pineapples that I cut. Hawaiian pineapples taste so much better than the ones you get back in the Mainland now. I made one mild and one super hot... the smaller dish has the hot. Put a big blob of this on the fish.... make sure to add a lot of the juice.

I also made some Hawaiian BBQ skin on chicken thighs. You can't get the real Hawaiian BBQ sauce at home... it's got the consistency of teriyaki sauce.

My GF made some elotes better known as Mexican street corn. OMG I pigged out and ate 4 of them.

There are recipes on YouTube, try it next time you BBQ it isn't complicated but it's really good. There were so many good vendors around us in Popotla we took it for granted. One place was basically 25cents per cob. It was mandatory at my game BBQs LOL

My GF uses her family's recipe but this is the one she gives to her gringo friends who seem to really like.

Thats a decent recipe.

One tip (which I am sure most of you already know) is that you dont need to oil your grates. Halve a potato and run that over a hot grate to make a non-stick surface.

I was able to nab some fresh shrimp right off a shrimp boat yesterday. They had just been caught so obviously they were not frozen. Heads on of course!

So I boiled em up and covered them with my Cajun galic sauce. Super simple and fast... the taste was amazing.

Reminds me when I was in Bergen Norway back in the mid-70's. The fishing fleet would return in the afternoon and they would offload shrimp directly into pots of boiling brine. Then they would sell the cooked shrimp. I would get a loaf of bread at the bakery, a hunk of cheese and a bag full of cooked shrimp. I would walk over to the park nearby and just sit there and eat my dinner.

God I had fun in Norway. Almost brought back a Norwegian wife as well. LOL

Bacon, tomato, black olives, onion... Right mix. She put arugula on part too.

One of mine as well. We ordered seconds of them.


I ate it almost every day when we were in Hawaii a few weeks ago. There was a Poke place right down the street from the house with super fresh Poke. I would get Tako Poke 3 different ways and damn near eat it all myself for lunch.

The dish you got looks like it was grilled. Honestly, that's my favorite way to eat it. Especially if the outside is crispy and the inside is soft. That's like heaven.

We went spearfishing most of the days we were there right behind the house. I brought our gear and polespears. We got some decent fish... but I was really hoping for some octopus. No luck there though. When I was a kid I used to get em all the time and bring em home to eat right away. So good.

Lots of good looking grub there. I can see that you stayed in some kind of resort style location if you were eating like that in The 242 cause dats not Bahamian food. LOL

Even those stone crab claws aren't a local choice there believe it or not. Years ago, the US introduced stone crabs over there so that the Bahamians could have an additional fishery. At least that's the story my Bahamian friends told me. Anyway, apparently the locals didn't like it and they never really caught on. Because of that... I have nabbed that biggest stone crabs I have ever seen over there. I've gotten claws that where bigger than both of my hands. The locals on the island I used to frequent would save the claws for me because they didn't like to eat them. The crabs sometimes get in their fish traps and they are considered a nuisance. Plus, they can pinch the ever loving shit out of you... the monsters can cause you to lose digits.

I would feast like a king on those claws when I went over. The locals would just laugh like there was something wrong with me.

Floating resort - not mine :) We spent a week in the Exumas. 5 person crew including a culinary trained chef. We ate like royalty. Fishing was slow but we did catch a few queen snapper with a deep drop rig.
