Gonna Try CGI's Bourbon chicken soon, but we have to find some Bourbon so have to wait till I head up to ye old liquor joint.

I got up early and put another batch of peanuts on. I was gonna do George’s recipe from the Food Porn thread, but a co-worker told me he uses Jerk seasoning and I’m a huge fan of Jerked anything. Gotta be worth a try so Im going Jamaica mon.

Its been raining since Friday in Atlanta. A cool, wet wet existence these last few days. So Im thinkin soup today. Probably hamburger vegetable soup.

Anyone do a pre-brine? Tried it this time for the chicken. Is the difference really that noticeable?
Brining is 100% essential for turkey/ whole chicken IMO. It takes time but you will not be disappointed.

Man ...right now I got bacon and hash bowns goin. Eggs gonna be over easy. Wifey cooks the bacon low and it seems to enhance the flavor.

Coffee kicking in.

This is gonna be one helluva food packed day.

I got my cookies in the oven. I used a recipe from an american website so I'm running round the house going "how much is a cup?!" And trying to convert fahrenheit into celsius. Baking is not fun. I'll let you know how they turn out.

Never could do dark meat for turkey and I don't know why, it's not like I haven't had other meats like Duck, Pheasant or corniche game hen, but for some reason I refrain from the dark meat turkey.

I always do this with chicken wings.

I use salt, black pepper, fresh lemon juice, and cold water. Soak in the fridge for about an hour prior to cooking.
