Tonight its Fajitas.
Just put the meat in the marinade and made salsa.
Grilled Mexican corn.

Early game tomorrow.
I'm just cooking a chuck roast with carrots and potatoes in the slow cooker.
After a biscuits and gravy breakfast.
 
Gonna do street tacos, they're great gameday food becuase of the simplicity. Doing steak (I buy cheap skirt type meat and marinate it for a couple days in the fridge) and cook it up on the grill on max heat with a quick sear on both sides. From there I use doubled corn tortillas but I toast them on a hot pan which changes the flavor and consistency. Not sure what sides but that stuff doesn't matter so much, probably will grill up some onion/bell peppers but I prefer less sides to enjoy more tacos.

And my wife's tomatilla salsa which is ridiculous, this is the real decision driver since she has made up a batch of this stuff. Hers is based on a family recipe from a friend of ours, which is chunky as opposed to the soupy look the classic tomatilla salsas have. So good.

Gotta go get some good beers today though. The beer is critical. :beer2::biggrin:
 
Going to make shredded buffalo chicken sliders with pretzel buns and ranch shredded coleslaw and blue cheese crumbles. Side of made from scratch Mac and cheese. Taking everything to not make it today.
You just made me hungry you bastid. Sounds amazing. :ROFLMAO:

Ok this sounds good. How are you making the chicken?

Im going to try cooking it in a pressure cooker with some dry ranch mix, little butter, and chicken broth. Once cooked going to shred and mix in buffalo and cook a couple more minutes. First time doing this so will let you all know how it turns out.
 
Ok I'm thinking I might do fajitas. My fajitas are legendary. I doubt they are anywhere near authentic but never having been to Mexico I dont know.

I will marinade chicken. I like to put some chopped chorizo sausage through it too. Then a homemade salsa and some fried peppers and onions. Will just do a simple salad to go alongside I think.

And a LOT of beer. And fucking Victory Whisky.

I keep a shaker of Hidden Valley Ranch seasoning on hand at all times. Works in Sooo much... Kinda like Franks Buffalo sauce, which u may be using as well. Your menu for tomorrow sounds amazing btw.
 
Anyone do a pre-brine? Tried it this time for the chicken. Is the difference really that noticeable?

I've heard of brining turkeys/chickens/ham etc. But I've never done so.
 
I was watching triple d yesterday and heard a fried chicken place brining to infuse moisture and some flavor. So I tried it today. Just want to know how much more improved the flavor will be as a result.
 
I told my wife you were making split pea and she requested that we make it sometime later in the week.

I think I'll make it with chunks of my homemade bacon.
Never can go wrong with Bacon.

I've never had Brine meat, but...

My niece had a friend who traveled to Australia, and she really I mean really liked the brine chicken.

And she had the money to eat wherever. I looked years ago and there's recipes all over the place.

Decided to bake some cookies too. Never been a baker, it’s too technical. I’m a throw everything in and see how it goes kinda chef. So we will see how the cookies end up.

Had Fajitas last night at the local secret Mexican spot. So beat you guys to it.

Wife has some Tri Tip lined up for me to grill. Ya'll don't even know. Yea, that's wassup!

Gonna Try CGI's Bourbon chicken soon, but we have to find some Bourbon so have to wait till I head up to ye old liquor joint.
