This was me as a kid back in The 808... I started a little younger though. You gotta bite em right between the eyes to kill em. When you bite the right place... they die instantly... and they usually instantly change color too. That color change let's you know that you're in the clear... otherwise they will bite chunks of your flesh off with their parrot like beans. You make damn sure they're dead after getting a hunk of your flesh bit off. You don't ever make that mistake again.

Yes it is weird. Working on that. So far I haven’t found out why. I will get help on it this week.

I made this Thursday night. Medallions of delete mignon and corn on the cob to go with crab stuffed 4/1 prawns. Pretty damn good eats.

We kept all the shells and what was left of the heads to make a stock. I’m planning on doing crab bisque with it on Sunday.

Also... and this is a Southern thing... a Po Boy Sammy down here is loaded with coleslaw on the Sammy. Yours looks great... but we wouldn't call that a Po Boy. Maybe you don't like coleslaw?

Love Coleslaw, but didn't feel like it would make this better, so I omitted it. The pickles kinda take its place for me.

As for the batter, I soaked them in a buttermilk, egg, hot sauce and Cajun spice mix for a few hrs. Then I dredge them in a mix of flour, corn meal and more slap yo mama... As well as some other assorted faves. Fry them up in peanut oil and enjoy.

I love me some pickles too! Seems like I've been craving them constantly these days... somehow I'm not pregnant though. We have a deli near by that makes their own and I've been getting some a couple times a week now. Spicy ones.

I'm funny about my coleslaw. I like it to be creamy and sweet. Putting that on the Sammy with pickles too is fucking awesome.

Your frying technique is different than mine. Here's what I do...
1st, I'll dredge them in a nice flour.
2nd, I dunk the flour coated shrimps into an egg and buttermilk solution.
3rd, then I dredge them into a bowl of seasoned Japanese bread crumbs.
Once I have all of them ready... time to drop em into the deep fryer filled with peanut oil.

*a 4th step can be added for coconut shrimp... take em outta the bread crumbs and dunk back into the egg solution and then dredge them into a bowl of shredded coconut.

*I season the shrimp prior to step 1.
 
My wife and I went out to celebrate our 22nd anniversary last night. Went to a cool place called Otto's High Dive (Neighborhood Rum Bar). Mainly a Rum bar but is also a Michelin Stared restaurant.

I snapped a pic of our seafood tower appetizer. The poke had watermelon in it and it was awesome. That stuff next to the poke was some kind of lobster concoction loaded with lobster and it was amazing too. As were the oysters and shrimp. They had a homemade cocktail sauce for the shrimp that put it over the top. We killed that whole thing in minutes lol.

Sorry, I still can't figure out how to rotate the pics... but it's better than nothing.
