I'm gonna make chicken parmigiana.

I was originally introduced to "chicken parm" by some Aussie friends. They love it in Australia but I guess its probably different there. Anyway, i do it what I am told is the "Italian-American" way, breaded chicken baked with tomato sauce, mozzarella and parmesan on a bed of spaghetti. Will do a rocket salad on the side too.

Probably will open a bottle of red too.

I'll likely be checking the score in the morning since I have to get up early, so wont be watching live unfortunately. Tonight I'm probably just going to make myself a simple pesto and chicken, probably with a little salad on the side, real simple stuff overall, nothing too thrilling. I made a cajun shrimp Alfredo the other day so I have some fresh pasta left still and want to use it up.

I know I'll crack, I always do. I'll probably end up checking sometime in the middle of the night if I wake up. Hopefully I don't wake up like midway through the 4th and see it's a close game or something, then I'll inevitably watch and be useless in the morning.

I'll check highlights before I have to leave and then if they win I'll do a full replay later in the evening. If they lose I'll probably watch the condensed game later in the week, busy 5 days ahead of me.

I put a 6lb roast in the crock pot before going to bed last night. Woke up to the best smelling house on the planet. This is a Mississippi roast, so I threw a bottle of pepperoncinis in that mofo along with some other goods.

Pulled beef sammiches on the docket for today my friends. Smothered in provolone and horseradish sowse.... Side of steak fries and homemade whiskey BBQ sowse. Maybe some home pickled asparagus spears as well.... Random, I know.

I was just about to say the same thing except it's missing the Giardiniera. @Faceplant what other spices do you marinate the Mississippi roast in?

Worcestershire, garlic, Italian seasoning... Whatever else you want to throw I there. I used a pack of onion soup mix and a packet of Good Seasons Italian dressing mix. That stuff is crack.

I made up a batch of tuna salad for sandwiches. Prefer mine with a lot of finely diced onion and dill pickle mixed in with the tuna and light mayo then add ground pepper and a splash of lemon juice.

They're best on good buns with redleaf or greenleaf lettuce but having them on white bread today because fuck it don't feel like enduring the store.

Since its a night game this time the meal will be dinner. Homemade pizza with sausage, pepperoni, salami, mushrooms, olives and bell peppers. I saute the mushrooms and bell pepper in butter before I put them on the pizza. Its a fairly simple recipe.

The dough is baking flour, yeast, oil and hot water. I put some salt and garlic powder in the flour and sift it all together before the oil and water. Then knead it in the Kitchen Aid mixer. Then I pre-cook the dough a bit before putting everything on it.

The sauce is a simple Prego and tomato paste to thicken it a bit. The key to flavor is to sprinkle the parmesan on top before you bake it. And Italian seasoning too. It really cooks the flavor in it.

When the grandkids come over the first thing they ask is if I can make my homemade pizza.
