Brine was good on chicken. I will do a hot brine next time.

victory dinner will be chili with ground chuck, smoked brisket and chorizo.

Gotta be careful with the salt...it can over-power poultry
I hear ya. However poultry lack moistrure and IMO taste unless you marinate/brine/sauce the goods in or on. I prefer a brined large bird if I have a choice.
 
Update:

Mooncakes have some work behind them but they are really good.
