New food obsession:

Charcoal grilled hamachi kama (yellowtail collar). Have had it a couple of times at a local Japanese restaurant. The "collar" (pretty much the lower jaw) is the best part of the fish, and when its grilled to crispy-skin perfection... outstanding! Have not found a local fish market that sells this part of the fish but, if I do... Big Green Egg engage!!!!

You can get the whole head of almost any fish at Lombardi's on Fairbanks. Call ahead and you can request whatever fish head you are looking for. They always have big grouper heads.

Lighthouse Seafood in Lake Mary can probably get fish heads too... but they don't have the variety that Lombardi's has.

If you call out to any of the seafood shops at The Cape... they can tell you what came off the boats almost dailey.

Buying the whole head is the way to go... you'll get the cheeks that way too.

Much easier too if someone else is making it. Umi makes great stuff... I also really like Sushi Pop in Winter Park.

Yellowtail in a sushi place is normally what we call Yellowjacks here in FL. On the West Coast they call them Yellowtail. Yellowtails here in Florida are actually Yellowtail Snappers and are not gonna be the Yellowtail you are looking for. Make sure to specify that you're not looking for Yellowtail Snapper.

Lombardi's will definitely order anything you're looking for. It's always hit or miss when you just walk in there as far as what they're going to have in the case. They do have a good variety though usually. You're probably going to need to order that. You might want to just get the whole fish too because that is a damn good eating sushi fish... not just the collar.

You might want to experiment with some other types of fish too. Especially grouper heads because they are usually very easy to get your hands on and they are bigger than the yellowtail. The bigger size can make it a little easier and more forgiving to cook on the egg. I like to fry grouper heads in my turkey frier... there will be real crispy parts and real juicy meaty parts too. That collar meat is good stuff... but the cheeks are usually the best meat on the fish. All the head meat is an under valued part of the fish here in the US for the most part. People don't know what they are missing. The eyes are very tasty too on fried heads... most folks won't try that though.

I...don't think I could eat a fish head. I struggle with dead animals and their eyes. Fish are the worst, especially after someone (not going to say whom) held a dead fish from an aquarium over my head to "toughen me up". It just...soured the appeal. Maybe had I grown up differently, I'd feel a different way, but I've always been more of an indoors gal than anything. If I'm eating a fish, it's going to be without bones, tail, or head.

Strangely enough, though, I will eat with the heads of crustaceans (like shrimp, crawdad, even crab) on the plate. Same with octopus and squid.

Here's a great video from Islamorada FL... a guide that I know... showing almost exactly how I fry the grouper heads. Now they also show the catching part... but you can go straight to the cooking if you want. I learned how to do this from an old lady in the Bahamas.

Ate this octopus tonight down in Vera Cruz at a great restaurant directly on the beach. The red sauce is very spicy and it is the way they prefer to make here down here in Mexico. I am now convinced that I'll hate not being able to have it like this back home. Just amazing.

I would love to spend a few months down there, working for free in their kitchen.

It's some kind of cheese that they put on a lot of things here. Definitely not blue cheese... it's very light tasting.

That is bacon. There was also a fried plantain... and underneath that was some rice with some beans. Like a dirty rice.

I had this literal Flaming dish in Teotihuaccan last Friday after touring the pyramids. You can kind of see the flames in one of the pics but they don't show up much for some reason.

That big thing that looks like a giant pork rind is a very large piece of fried pig skin. There were a lot of different things down in that lava bowl including cactus and various peppers. Once the flames died off I made some of the best tacos I've ever eaten. Mine had pork and chicken but others got a bowl with various cuts of beef.
