I wanted an Old Country pecos or brazeers, but tough to get out here in CA. At least with the covid bs.

This thing is relatively inexpensive for the sturdiness of it and with a few mods should run smooth.

I assembled it with 1000° Nomex between the firebox and the cooking chamber. Applied it to the cooking chamber lid base and the fire box lid as well.
I also used high temp, food grade RTV to assemble the fire box itself.

I purchased a baffle / tuning kit to help even out the Temps from side to side. I wont always need them, so I'll leave them removable.
I also have a charcoal box and lid clamps on order.
I want this to hold and maintain as much heat as possible so I'm not burning through coal. I want a clean draw of heat and light smoke.
I will more than likely run charcoal and wood chunks on this for the most part, unless I find a local provider that sells good logs.

This pick is from today. I'm in the process of seasoning it.

It suited me well in my last apartment, where I couldn't use charcoal or even gas. Only electric grills were aloud.. All the association saw was that the pellet grill plugged in. They weren't aware that I was running wood pellets. Haha. I pumped a ton of meat through that little tin can.

Now that my girl and I have moved in together and have no restrictions, it was time for some coal and wood. Man I love it. Im not knocking pellet grills at all. You can pump out a great product with them. But to me, there is nothing more fun than playing with fire and drinking bourbon. Haha.

Now I get to go through the process of learning what this smoker wants and doesn't want. It will certainly be fun

If you can find some... give Fogo premium lump charcoal a try. It's my favorite. They have different sized chunks available too depending on how long the cook might take.

Love the idea of the Dog thread! Thanks for steering me there. I need to get Piper on there also. She is pretty much a rock star in the family. Fantastic at special teams play and depth at the slot receiver position. :biggrin:

Just saw the same Air Fryer I bought on Amazon a month ago at Costco last week at a great price. If you don't already have one, get one. The Sunday breakfast feast became that much better!

So I ordered myself 5 different species of these little monsters from a grower out in Oregon. They arrived last night. These are all just baby plants...

Carnivorous plants are so cool. My wife and I have small all green one. I want to get a Nepenthes plant, they also have a lot of varieties.

I remember when I studied horticulture in high school. It was fun taking care of plants. Not so much fun with the school work. And I managed to get a Diffenbachia out of it! Unfortunately, my parents didn't really take care of it, and I couldn't have it at my house, so it died soon after. I don't know where I'm going to find another Diffenbachia, and I want a cactus as well.
