A Smash Burger should be flattened as thin as possible imo. That way you get this crispy crust in the patties.
Take 2oz balls of 80/20.
Pile on sliced onions.
Smash it down as this as possible.
They cook fast and are a favorite with my wife and kids.
They like them more than juicy thick burgers.
I think most people don’t do them right.Thank you.
There's a place near me in Manhattan that makes Smash Burgers, with grilled onions. I enjoy them but not sure if they are really good or just OK because I have no point of reference for comparison.

I got to be honest, I'm kind of aroused.
I think most people don’t do them right.
Forming a thick patty, then pressing down on it doesn’t make it a smash burger.
Oklahoma Smash Burgers were invented around the time of the Great Depression.
It was a way to stretch meat out and still get a decent meal. The onions were cheap filler.
2oz per patty should be the most you would use.
I usually use 2 thin patties per burger.
