I had to work Valentine's day evening so we decided to do VD dinner tonight.

So I stopped by my favorite fish market and they had some really nice looking King Crab legs (almost a pound each). They had Chilean Sea bass too but that's for tomorrow night.

I had also dry aged some Ribeye steaks for 21 days.

Some asparagus to round it out and... Pretty damn good meal.

OK. So I think I make some pretty good meals for me lady. She wanted some type of white fish and a salad.

So... Wahoo and Mahi Mahi on a bed of creamed grits with the addition of Brie and thinly sliced white mushrooms


I seasoned the fish medallions with some of my steak seasoning and blackened them on high heat in avocado oil while keeping them medium rare.

The salad is where IMO I made the mistake. It was good but I used black truffle oil and it really clashed with the rice wine vinegar, and tarragon in the dressing.

The wife loved it but I didn't.

I really like Mahi Mahi.
A great fish for the price.

I used some of my home grown peppers last night as an ingredient in my Rum N Cilantro Garlic Shrimp. I picked them right before I started cooking so they were FRESH. I only used the Thai and Cayenne peppers in the dish. The big Cherry peppers were popped into some vinegar for later use... they are beautiful though.

I use Papa's Pilar dark rum in this and it makes an amazing sauce. The shrimp is done way before the sauce, so they get removed and the sauce is allowed to thicken. Then the sauce is poured over the shrimp and served. Very messy... but after one bite you don't care one bit.

Oh... why do you think I got the head-on shrimp. The heads taste better than the tails to me. But even for people who won't try that, just cooking them with the heads still on adds a whole lot more flavor to the dish.

We've probably talked about this before... but I love ordering sweet shrimp at sushi restaurants because of the fried heads. Lots of the restaurants don't even serve the fried head because most Americans won't eat em. I've heard that from more than a few sushi places. I make sure to specify that I want the heads when ordering because of that. Man those fried heads are so damned good.

Funny. We went to a place a couple of times in Eugene, OR. The first time we went there, they served the fried heads. The next time, they were just the tails. I complained and the server said they never have served the heads with them. To which I called bullshit. Then another person told me that they only come if you ask for them. Then the fucking owner told me that they had to stop serving them because the sharp pieces were stabbing people in the mouth. They might have tried to get their stories straight.

Never went there again.

I really miss fried shrimp heads.

Seriously.

Most people just go for sushi because it's "cool".

Many don't even know that most of it is finger food. Which is why many places give you a hot towel to wash off.
The hot towel is another missing item in most places these days.

Eating sushi with chop sticks isn't the way it should be.
Sushimi...that's fine.
But sushi is finger food, as far as I know.

Maybe I'm wrong.

So I did this. Not even sure what you'd call it.

I made a Mexican "fried rice" by cooking some white rice then letting it sit. After about an hour, I sauted some mushrooms, added some sweet onion, then the rice. The oil was avocado oil BTW. Near the end of the fry I added fresh Roma tomatoes. In another pan, I seared a skin on filet of barramundi with my chipotle seasoning - also in avocado oil. Instead of flipping it, I seared it high and kept basting it to cook the top.

For the side I broiled these huge jalapenos I found and then tossed them in my chipotle seasoning before deseeding them.

I have to admit that I thought it might be a crap shoot on if it would work. But boy did it. Freaking yummy!
