I've decided to make some lobster mac n cheese to go with everything else. Gonna grill up some bugs and mix it into some baked mac n cheese.

My wife picked up some ribs. Might do those. Not sure.

She also made a killer cheeseburger soup this week... might ask her to do that thing again. But, usually for SuperBowl I do most cooking.

I got to figure this out soon, though. Heading out to the store.

Cheeseburger soup?

Yes. Below is the base recipe. Killer! We haven’t made bun crotons. Doesn’t need them.

INGREDIENTS:
  • 3 hamburger buns, diced into 1-inch cubes (CGI says - optional)
  • 4 slices bacon, diced
  • 1 tablespoon olive oil
  • 8 ounces ground beef
  • 1/4 cup unsalted butter
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 carrots, grated
  • 1 teaspoon Worcestershire
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups chicken broth
  • 2 cups milk, or more, as needed
  • 2 russet potatoes, peeled and cubed
  • 1 1/2 cups shredded cheddar cheese
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped chives
DIRECTIONS:
  1. Preheat oven to 400 degrees F. Spread bread cubes in a single layer on a baking sheet. Place into oven and bake until crisp and golden, about 10-15 minutes; set aside.
  2. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside.
  3. Heat olive oil in a saucepan over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat and set aside.
  4. Melt butter in a large stockpot or Dutch oven over medium heat. Add garlic, onion, celery, carrots and Worcestershire. Cook, stirring frequently, until onions have become translucent, about 2-3 minutes.
  5. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in chicken broth and milk, and cook, whisking constantly, until slightly thickened, about 1-2 minutes. Stir in potatoes.
  6. Bring to a boil; reduce heat and simmer until potatoes are tender, about 12-15 minutes. Stir in ground beef, cheese, salt and pepper, to taste. If the soup is too thick, add more milk as needed until desired consistency is reached.
  7. Serve immediately, garnished with croutons, bacon and chives, if desired.

My advice making this; put thought into how many and how big you want your potato pieces.

I cut back potato a bit in a recipe like this, but recommend putting thought into your taste ratio there.

It’s a great soup.

It's really tasty. Lots of different POP in that salsa. It's good on almost anything.

Hopefully you found some fresh mangos and you know how to cut them. LOL

These sure look like easy gobblers. That’s some man-food right there.

Sweet and Spicy Bacon Wrapped Meatballs

Ingredients
  • 1 lb bacon cut in half (my package had 18 slices so I had 36 half-slices of bacon)
  • 36 meatballs or as many as you have bacon slices
  • 1 cup brown sugar
  • 3 tablespoons chili powder
Instructions
  • Preheat the oven to 350 degrees.
  • Mix together brown sugar and chili powder in a small bowl.
  • Spray a broiler pan with nonstick cooking spray.
  • Cut a pound of bacon strips in half and wrap them around meatballs (I used store bought, fully cooked Italian style meatballs that I thawed in the microwave before wrapping them with bacon.), securing the bacon in place with a toothpick.
  • Dredge the bacon wrapped meatballs in the sugar and chili mixture, pressing to coat it well.
  • Place them on the greased broiler pan and bake at 350 degrees for 30-35 minutes, depending on how you like your bacon.

I was supposed to be off work tomorrow and was going to the bar with my pals to watch the game. Unfortunately my boss is now not in work tomorrow which means I have to go in, so no bar for me (the game will finish at 4am ish and I need to leave at 6am.)

This is bad news. But it does mean I can cook at my place. So I have made a pineapple salsa and am going to make nachos, I'm doing hot dogs, chicken wings and halloumi fries too. I will also be making some mocktails because why not.

Let's go chiefs!

I have some coffee and chili peppers rubbed ribs going on the grill soon. Salmon mac and cheese for the wife and a few stuffed jalapeno peppers amongst other crap to stuff in my face during the game

I'm gonna inject my yard birds before I smoke em with a butter wing sauce concoction I came up with. I also got some Hawaiian beer to use in the beer can apparatus I smoke em on.

And... I'm gonna use some dried chipotle pepper flakes with the rest of the rub i usually use. I just opened this pepper flake bottle for the 1st time... it smells like the best BBQ I've ever smelled. I shared these pepper flakes in the Food Porn thread... man these flakes are amazing. We built our home with SB parties in mind. Became quite the tradition for many years.

This year the the FUCKING WHINERS in the game its me and the M-wife only. And for good reason.

The last time the WHINERS were in the big game there were plenty of WHINER FAKE FANS here some by not our choosing. (yes, some brought people not invited). We were of course good sports. But.....

.......that year is known by some of our regulars as "Jersey Gate". A story for another time but let me just say we can never have another party with those shit FAKE FANS team in the SB. Really disappointing.

So todays delight?

Queso, artichoke and Jalepeno dip, and pizza.

When you are rooting so heavy against a team there feels no need for a real celebration.

So when it comes right down to it.......
