I was watching Man, Fire, Food this morning. A guy made a white bean stew with clams and Chorizo.
So, I check my fridge. No clams, no Chorizo, but I have Italian Sausage.
I check my pantry. No Canelinni beans, but I have Pinto beans so I go for it.
I browned 2 sausage links so I can slice it. I then throw some bacon fat in the pan and add diced carrots, celery and jalapeno. After they soften, I add fresh garlic and about 2 t of smoked hot paprika and some salt.
I then add 1-15 oz can of pinto beans and sliced sausage along with about 1/2 C chicken stock and let it simmer until the sausage is finished cooking and the liquid is reduced.
Served it with some nice buttered bread and some grated Parm.
Came out incredible. I ate the whole damn thing through the day. I just had to keep going back until it was gone.
