What most folks like when I cook is my sweet tater pie.

I can cook a bird, ham etc and I can make a homemade dressing with sage and thyme off the Charts, but I get most the comments about my S Carolina Sweet Tater pie.

When I was younger ,I use to fish like a MoFo on Snake Creek, it was in my backyard. Man I was so glad we got out the the hood. I use to take my Schinno 1500 reel or however it's spelled and fish like crazy with my pink 6lb Ande line.

I use to catch bass like crazy and since none of the family liked bass,I'd take all of them to my neighbor 2 houses down.

Now my Mother was adamant No Bias prediduce,Ever. Treat everyone with respect to your elders no matter what race colour, it's yes ma'am, yes sir.

So Mister James and His Wife Ms Anna got along with my family very very well. She baked us a sweet tater pie for Thanksgiving and I loved it.

Now me being the kid/teen I was,I brought over some bass I just had caught, like 20lbs worth,it had been a Very Good day.

Ms Anna said thanks and Mr James would be home soon.I asked/Told her Ms Anna you're the 1 I would like to talk too and she looked at me kinda dazed and said why ?

And I replied Ms Anna I would like that Sweet Tater pie recipe, please please please please Ms Anna. Lol

She said sure, take 6 8 sweet taters cook em.Then peel them, add 1 cup Brown sugar, 2 cans of Borden sweet condensed milk 14oz size. Then add about a 1/4 cup Allspice and Half a cup Nutmeg with a Couple Eggs.

She told me it should make 2 pies, best pieshell was the Gram Cracker 1 she said, And boy was she right.

So there's my secret recipe from the Late Great Ms Anna, Enjoy.

BTW want to see my fishing grounds back in the day.

Google 3951 207 Dr Carol City Fl.cant remember if it was 33054 or 33055.

I being for real, with that recipe I got a bunch of that's good. Now folks can always adjust and were do the biggest adjustments come from, Sugar Allspice and Nutmeg.lol.

Imho getting the Nutmeg right to you or your parties flavour is the most important.BTW forgot about that half stick of butter.

Just mix it all up.then add the allspice and nutmeg to taste. then bake it.

Now I love pumpkin pie and I love sweet potatoes.

That got a rare audible laugh out of me.

I make a vegetable casserole that is a hit. Sounds healthy.....far from it.

It starts with two cans of completely drained French cut green beans and two cans of completely drained ultra sweet white corn. Those get mixed and placed at the bottom of the casserole dish. I usually add about a cup of mozzarella mixed in as well.

Then you beat two softened cream cheese and a can of cream of celery soup and add that on top of the veggies. Smoothed out.

On top of that you crush two sleeves of Ritz crackers and add melted butter to taste. U want them decently coates. Add that over the cream cheese mixture and then load the top with mozzarella cheese. Bake covered on 350 for about 30 min then take the foil off the top and finish baking til the cheese on top is all melted.

I got the recipe from a friend of my moms when I was a teenager and have kept it and its become very popular and requested for all get together. The key is to not skimp on the ingredients. Buy quality veggies and make sure they are completely drained.

one staple that I have to make is my cranberry sauce. Everyone seems to love it so I have to make it to bring wherever we end up. The kicker is, I dont even like the crap. The wife has to taste test it to make sure it is good.

Last year I made an oyster stuffing for a friends get-together. 2 large aluminum foil pans and not a single bit left. Made 3 loaves of cornbread and shucked 5 dz oysters and ended up having about a cup size serving.

So this year I am making it again since we are staying home.

Man... I LOVE oyster stuffing. I've made it several times and I've been looking for the right time to make it again. One thing that I do that gives mine the perfect crispness around the outside is I bake mine in my cast iron skillet. I'm literally dreaming of some oyster stuffing now... I'm glad you brought that up.

My best Thanksgiving dish is without a dought my fried turkey.

I used to do it redneck style with the big pot of peanut oil over a gas burner outside. That shit is not precise and it's literally a safety hazard.

So years back I bought myself an electric turkey frier. It's keeps the oil at perfect temp and the safety concerns are almost nothing compared to the redneck way.

It's so good that I fry 2 turkeys. That way I'll hopefully have some leftovers for sandwiches. My crew goes back for 3rds and 4ths on fried turkey. Small skirmishes break out for the crispy skin too. If I didn't make 2... people might be seriously injured over who gets more turkey. LOL

It's really good. I won't cook it any other way. It beats the hell out of turkey cooked other ways. I've smoked turkeys beer can style... and that is pretty damn good... but a turkey fried in peanut oil perfectly after being injected with some Cajun butter injector shit that I doctor up is something completely different. I have a spicy seasoning that I coat on that skin first too.

I don't care as long as I have my mashed taters. If my family wouldn't hate me this would totally be me.

Man honestly this sounds good, quick and easy, plus not expensive.

Imho you could throw some ham or tuna to make it a complete casserole.

I just have to extra protein for my diet. Honestly gonna give this a shot soon.

My Grandmother made her's with mini marshmallows baked on top too. She'd bake it so the marshmallows would brown up and be crispy... but I never ate it either.

I don't usually eat any deserts or sweets at all. I don't really like em. However, I do enjoy hot cherry pie with vanilla ice cream and a good Key lime pie.

I do like a baked sweet potato though. I eat the skin and everything. I don't even put butter on it. Just salt and pepper the skin after giving it a good coat of olive oil. But sweet potato pie just doesn't work at all for me. My sister loves it though.

I love a good sweet potato casserole. That usually contains brown sugar and marshmallows baked into the casserole. Absolutely delicious, and it's good for both Thanksgiving and Christmas.
