I just went outside and took a peek at the pork butt. That 14 pound butt my wife got me actually turned out to be 2 separate butts not one big one. So there's 2.

I put these on the egg last night at 10pm after I soaked em in apple cider vinegar and Papa's Pilar BBQ sauce for about 8 or 9 hours. I use Fogo lump coal and big hunks of apple wood for the 14 hour smoke. I'm gonna get these off the egg in a few hours and put em in a big empty cooler to rest for a while before I pull em.

I can tell it's gonna be DANK AF. My whole neighborhood smells like a BBQ restaurant.

Looks tight! I use a similar Apple cider vinegar marinade base in the crock pot. Mine also has soy, cumin, mustard, chili powder, garlic, cinnamon, and salt & pepper. After a few hours in the pot, I'll hit with a coat of Brown sugar. No bbq sauce needed.

No BBQ sauce needed on mine either.

One thing that I personally do require on my pulled pork sandwiches is a big blob of sweet coleslaw. Gotta have it! If you've never tried that... you need to the next chance you get.

Making some baked mac n cheese and BBQ baked beans too.

Got T and his new bride coming over later. Brett will be here too. So 2 of my bois and my new daughter.

My bat shit crazy sister in law just called to say she's coming over too. Literally while I'm typing this I'm learning of this. Ha. She's not even a hundred pounds though so she won't eat too much.

I want to make some pulled pork nachos tomorrow night. Hopefully there will be plenty left over.

I love playing with sauces on pulled pork.

Bold sauce... vinegar bbq sauce... carolina mustard bbq sauce.... yum!


I do have a variety of sauces for those who like it. 5 different kinds that are all very different.

The GF is slaving away as we speak, we are about an hour out.

She insists on cauliflower cheese with a roast ham, I think that's a very specifically Glasgow thing rather than a British thing. But we will send you pics!

Once the games start, I watch nonstop football for 7+hrs before getting to SNF... so, I am eating all day long.

Which is why I like crockpot stuff, you eat when you want... as much as you want... as often as you want. (y)

It’s also cooler where I live, so this sort of food “fits”.

Anyway..., I am going this direction Sunday... and I know the true culinary guys will cringe... @Selassie I has been begging for this recipe...

Okay... I know we’ve been joking about this thing, and... okay, it is certainly simple comfort food... but HOLY COW... this thing is really tasty, and easy.

I ended up flipping it to a casserole, and putting the cheese down then tots on top... to ensure this baby had a crispy top (inspired by @FaulkSF, @Selassie I)...

Jackpot!! That’s the way to do this one!

Cheap. Easy. Great!

^^^ that's the ham being basted before being finished off and resting. There is mash, carrots and cauliflower cheese in the shot too. We also have roast potatoes in the oven.

OK.

Gumbo has been cooking close to 15 hours.

My wife and I got bored during the afternoon games and also decided to try our hand at homemade English Muffins.

Not that the two are related meals - we just enjoy trying new recipes together.

I'm really excited to have homemade muffins with Hollandaise and Canadian Bacon later this week.

Tonight it is the feast of a cooked meal.

A calculated and timed meal.

A mix of all three phases of the game, slowly cooked together to create a rue that just cooks everything together.

A RAMS win!

Tonight for us is spaghetti dinner with all the fixins. I did make a loaf of french bread last night. Didn't rise as much as hoped but thin sliced garlic bread incoming weeeee.
