I originally planned to make smash burgers.

Woke up today not feeling that and not wanting to cook during the game.

My wife makes a great chicken, rice, beans, rotell meal in the insta pot. I mentioned that.

A few hours later she mentioned making Gumbo.

Gumbo it is! I can't wait!

I try to stay close to this recipe.

Wife and I talking about it. Tired of cooking as I ran that marathon last year. Sounds like the plan is to throw a butt or shoulder into the pot and toss a fried egg onto a ciabatta with bbq sauce, garlic hatch, and some quick slaw.

Easier than making scratch clam chowder.

Once the games start, I watch nonstop football for 7+hrs before getting to SNF... so, I am eating all day long.

Which is why I like crockpot stuff, you eat when you want... as much as you want... as often as you want. (y)

It’s also cooler where I live, so this sort of food “fits”.

Anyway..., I am going this direction Sunday... and I know the true culinary guys will cringe... @Selassie I has been begging for this recipe...

I’m not eating heavy. It’s already too hard to stay awake to the end. Light supper Should be on the menu. I haven’t decided what yet. Maybe fish.

That was my snack halfway through the afternoon games last week. Used an air fryer on the tots, cheddar cheese, meat from a fried chicken leg, minced onions and salsa into the oven for 10 minutes to melt the cheese. It was delicious.

I'm sure that will have a good taste. I'm just not sure that the texture of that would work for me after 3 hours in the crockpot... especially the tater tots. Those tots are gonna be more moist than the ones that Napoleon Dynamite pulled out of his pocket after his classmate kicked em. I like my tots extra crispy...

The wife got a 14 pound pork shoulder yesterday. I'm gonna put that beast on my egg and smoke it to perfection for pulled pork. I've shown pics of my method of this somewhere in the Food Porn thread.

It's 49er week, so back to basics or fundamentals as we change up our Ribeye's with Grilled Cajun Ribeye's Steaks accompanied with steam asparagus & garlic butter mushrooms...Then a nice Gary Farrell Pinot Noir from his Russian River Selection.

It is probably better assembled the way @FaulkSF suggests making it.

One thing I noticed somewhere, although it’s not on the image I posted... they said cook it with a towel over your slow cooker... then the lid. I assume that helps escape steam and makes it “crisper” on top.

Also funny you should ask. I just went down to the spice shop to get ingredients for my rubs and the lady told me she couldn't get some of my ingredients anymore. So now I have to try to find them on line or see if the place i used in Portland can get them to me.
