Can't remember have we had the Pappy's vs Bogart discussion here? The brisket is superior at Pappy's, and the ribs are better at Bogart's.

I like bbq meats too, have some pulled pork in the Crock-Pot (no smoker only a grill), use a dry rub with apple cider vinegar and soy. Hit it with some brown sugar within the last couple hours.

OMG, I went to Pappy's for my twenty-fourth birthday. Got the Big Ben. Ate it all in one sitting. Good times.

I have also always thought Memphis BBQ might be overrated until I tried it.

My gut says... if you can find it... there is a hole in the wall somewhere in Memphis that might hide the best BBQ known to mankind. Thick and sticky style, anyway.

My favorite is fresh seafood eaten the same day I catch it. Anyone who thinks they don't like fish or other seafoods has probably never eaten it this way. It's impossible to duplicate the flavors and textures of seafood that is eaten the same day It's caught.

My favorite is conch. Some say it's a giant snail, but it’s considered a shellfish. It has the added side effect of being a sex enhancer for men. It's nickname is Bahamian Viagra. Conch has the highest level of testosterone of any animal on the planet by a very large margin. So it's effects on men are not just a wives tale.

When we take our boat over to the Bahamas I make conch salad, which is basically conch ceviche, every single day. On our way out to fish/dive each day we will collect about 10 conch. We just put em in a compartment on the boat and they live all day long without water or the need to be iced. I'll use some for bait, but I'll keep most if not all for my daily salad that I make at the end of the day when we're cleaning our catch.

I bring shit ton of fresh oranges, lemons, and limes. You gotta use fresh squeezed juice. Put some fresh chucked tomatoes, onions, fresh bell peppers (NOT green ones though)... in a big glass sealed container with the cleaned conch pieces. Put it down in the cooler with brined ice (much colder than ice) to cool. It needs to sit in there to "cook" in the citrus juices for a few hours.

After the boat is washed and you're chilling at the dock with some strong cocktails in hand. Pull that ice cold conch salad out and get a big bowl of it for yourself. Add the hotsauce of your liking and everything in that bowl (especially the citus juice) be completely gone extremely fast. Repeat as needed. Whatever might be left over... I put that back down in the brined ice for the next morning... I'll have it for my breakfast first thing.

I make a mean conch chowder and fried cracked conch too. But that conch salad is my favorite food.
Have you tried Lionfish yet? It's a good eat. Nice white meat. The best thing about them in FL is you can take as many as you want.

Vietnamese One of my favorites is rice noodles with grilled beef and a bunch of fresh veggies in it. With a little fish sauce and peanuts.

Thai. Curries. And Chicken satay. Love that damn peanut sauce. Both Thai and Viet make a summer roll with shrimp and other stuff dipped in a peanut sauce.

Indian. Again with the Curries. Different taste than Thai

Greek. Love the lamb dishes. Interesting thought. The Greek restaurants in the US are just as good as the ones in Greece.

Korean. They make a great barbecue. Not like the US-style.

Mexican. Love Chicken Fajitas

Sushi. Just about anything except squid and octopus

Pizza. No canned mushrooms, pepperoni makes them greasy, but it's okay every once in a while.

I have. They're a little too fishy tasting for me, but my oldest son really likes them. There's not a lot of meat on those damn things so it's good that there's no limit on em. We usually have a self imposed limit of about 20 on any fish though. Cleaning that many fish (no matter what kind) the right way is a lot of work.... and some fish are harder to clean than others. Lions are on the harder side for cleaning on top of the small amount of meat. So we don't kill em to eat.

We do kill em though whenever we see them when we're diving. They are an invasive species and they don't belong in the waters on this part of the world. They are creating real problems in the ecosystems here because they have no predators here. Their population here is exploding. It's pretty bad. So we spear them constantly. They like to hang out in the same places lobsters hide... so we always see them.

We've been in several lionfish round ups down in the Keys and in the Bahamas. That's when a bunch of boats go out and see who can kill the most in a day. Winner gets a trophy. In the Keys they give the meat away. I never clean em though because it sucks.

I have had several in my fish tank over the years. They are very cool to watch in a tank. They can cause problems there too though because of their poisonous spines. They always seem to spine my expensive fish in the eye sooner or later. So I've sworn em off in my tank now. Screw those little bastards!
