My sons like to eat this as a sandwich with lettuce & tomato, onion, and a sesame seed bun. Like it is or with honey mustard.

Sounds like an awesome sandwich. I love a good grilled fish sandwich. And this looks like an awesome main ingredient. Though I would sub sweet red chili sauce for the mustard. Not much of a mustard guy.

I don't understand their obsession with honey mustard either. They even dip their fries in it.

You should shin kick him for putting honey mustard on that fish and ruining it.

May as well put some fecking Heinz 57 on it then!!!!!

Just made this last night for dinner.

It's a real easy and tasty way I like to cook salmon. I cook it on a cedar plank. I buy the cedar planks that are pre-soaked at Publix. Cooking the salmon on these keeps the fish very moist and just cooks it perfectly.

This is how I make it if it's just the wife and I eating. I have another recipe if my 3 sons are eating it that requires a whole big filet of salmon... I'll show that one next time I make it. This one just calls for you to salt and pepper both sides of the fish. I also put some red pepper flakes on top but that is optional. Place each piece on the plank with some space in between. The salmon is skinned, but always put the skin side on the cedar plank. Then add some pesto and pistachio nuts on top of each piece.

I cook this fish with an indirect heat. Cooking temp is 400 - 450. Once your grill is heated, place the plank in the center of the rack and cook for 30 minutes.

Ever hear of beer can chicken? Well this is the improved version.

Get yourself some Sittin Chicken ceramic bases. You can use these in a regular oven if you don't have a smoker. They take the place of the beer can and they hold the chicken upright while cooking.

Each Sittin Chicken holds a full beer. I like to use the beer from Kona pictured below. I put about 3 TBS of olive oil in first. Then I garlic press 5 cloves of garlic in each one. Pour in the beer.

Coat the entire chicken with your favorite rub. Make sure to get some down in between the skin and the meat. I also stuff the chicken with a bunch of scallions.

Put the chickens on the bases and cook on indirect heat. 250 degrees for 4 hours.

The beer in the Sittin Chicken bases steams up through the yard birds during the cooking process.

Little tough to keep the smoker up to temp when its below zero outside...Be assured I will be contributing to this thread once the 4' of snow melts off the patio

is cold weather your problem or the wind? I've always had problem with the wind more so than cold. If wind, do something like this? It'll keep the cold wind out.

actually have a few 55 gallon drums without tops or bottoms..but they are buried in the snow. During the summer the dogs play in and on top of em
