I thought I might as well post this one early. I am not entirely sure on my plans for the game. I have a few friends that want to go ice fishing in the morning before the game - they are both Raider fans and want to skip the game entirely.

My father in law has yet to try the sous vide so I also kind of want to encourage that from him.

With it being a couple of weeks away I thought possibly we'd get a little recipe sharing going.

Do we have favorites that have to be served? New recipes? A recipe that is geared towards either team? (I've learned a lot about cooking over the last couple of years doing this with Rams games)

Sausage dip is an easy one that I get requests to serve all the time. My wife actually brought the recipe home and we've loved it.

A block of cream cheese
Sour Cream (ratio with cream cheese I always do a bit more sour cream)
Hot italian sausage
Jalapeno diced (choose your heat I use 1 because. . . )
I add a small can of diced green chilies

Cook the sausage, add the veggies, add to melted together sour cream and cream cheese mixture. Stir together and serve with chips (or whatever you like)

It is consistently finished and consistently requested for by friends.

I'm going to my folks' house for the Super Bowl because I can't cook worth shit.

My dad makes the best jambalaya/gumbo north of the South. Andouille, jumbo shrimp, chicken, okra, the trinity, and his own blend of spices. And rice, of course. The way he described it, it's more like a stew than anything, but whatever works!

My youngest sister is also baking cinnamon rolls, and according to her, they're better than the ones at the St. Louis Bread Company (known as Panera to y'all who don't live in St. Louis).

I will be taking pics and posting them in the Food Porn section. Hope you enjoy!

Sounds good. It's different but still similar in a few ways to a Chili Relleno dip I make on occasion.

2 (8-ounce) packages of cream cheese (softened),
2-1/2 cups shredded Pepper Jack cheese,
2-1/2 cups shredded sharp cheddar cheese,
2 (7-ounce) cans diced green chiles,
1 small can sliced black olives,
1/2 cup finely chopped red onion,
1 cup salsa
Tabasco to taste

This can be cooked on the stove in an iron skillet or baked in the oven for 20-25 minutes.

3 to 4 tablespoons queso fresco crumbles tossed on top prior to serving,
3 tablespoons chopped cilantro on top for garnish

See several recipes similar to the buffalo chicken ranch dip we make, awesome ROD!
Only difference no sour cream, and add chicken breast, mozzarella, sharp cheddar, Frank's Red Hot sauce, Mexican seasoning, black pepper, and garnish with green onion. I'm lazy no measurements.

I spent most of the day last Sunday making my chilli. I make enough that I freeze a big amount for later... so I'll have some of that kinda like an appetizer/snack available all day.

The wife makes an artichoke-cheese-garlic-sun dried tomato dip. It goes great on tortilla chips and crackers.

We'll have raw veggies with dips too.

I'm gonna smoke two big chickens beer can style. I might smoke some atomic buffalo turds with those too.

For sides... I've got an old school Southern BBQ place around the corner where I'm gonna get their collard greens, coleslaw, baked beans, and cornbread. They make that stuff better than I can and it's very easy that way.

All of mine involve seafood... but Cuban sandwiches are Da Bomb and not that difficult. You gotta hot press the sandwich though for it to be perfect.

I do have a couple of salsa recipes from Miami that I love. One is mango and the other is pineapple. Let me know if you're interested in those. The pineapple salsa is easier to make... especially if you can't get fresh mangos where you are.

I'd like to know your mango salsa recipe please. I usually do mine with the usual mix of chopping the tomatoes, onions, cilantro, and mango on the knife and a portion of those four mix to the food processor

Mine will differ from yours it looks like. I'll try and post it up for you tonight or tomorrow.

BTW... this is normally against my recipe rule. I almost never share my recipes. I got that from my Grandmother... she would never share hers with anyone. She would say... if you want to eat that, you'll have to come over here to do it. I've adopted that myself now and it works great to get my family and friends to come over to my place.

Mango Salsa

Keep this a secret!


2-3 cups diced fresh mango. I like a little bigger than quarter inch sized cubes of mango.

1 large cucumber, peeled, seeded, and diced. I leave a little peel on. I use the Canadian cukes. They're bigger (twice the length of regular cukes). If you use regular cukes... use 2

1 poblano pepper, seeded, and finely diced. If you can't find a poblano... substitute with a red bell pepper.

1 jalapeno pepper, seeded and MINCED. Use more if you like it hot.

3 teaspoons minced fresh ginger

Half a cup chopped fresh cilantro

1 tablespoon packed light brown sugar... or to taste

1/4 cup fresh squeezed lime juice

Salt and pepper to taste

Combine all of the ingredients in a mixing bowl and gently toss.

Correct the seasonings, adding salt, lime juice, or sugar to taste. The salsa should be a little sweet and a little sour. Mango salsa tastes best served a couple of hours after making. Refrigerate covered until serving.

Super Bowl Participants As Food

The Super Bowl has become almost like a national holiday in the United States with families and friends getting together to watch the big game. Almost as important as the game is the food that people will consume.

According to Laurie Dixon of the Readers Digest, American’s are expected to eat 1.4 billion chicken wings during the big game. There will also be plenty of pizza, ribs, chips, and salsa, and even a few beers consumed.

With most of the food, there is a player in the game that is similar. Let’s breakdown some of the most popular foods, and how they compared to a Kansas City Chiefs or San Francisco 49ers player.

Jimmy Garoppolo – Ribs
Ribs can be a staple of any Super Bowl party, but they have to be just right. If the wrong rub or sauce is used on them, they won’t turn out great. That compares a lot to the play of the 49ers quarterback. He can play really well, but conditions need to be almost perfect for him to have success.

During the first couple of games of the playoffs, he hasn’t had to throw the ball a lot, but that might have to change during the Super Bowl. So will the conditions be perfect for Garoppolo, or will his ribs be cooked a little too long during the biggest moment of his career?

49ers Running Backs – Seven-Layer Dip
Seven-layer dip can be made in many different ways, but one of the most popular includes refried beans, sour cream, guacamole, salsa, cheese, green onions, and tomatoes. The 49ers running game might not have seven layers, but each of the three guys brings a little something different to the team that is crucial for winning games.

Raheem Mostert, Tevin Coleman, and Matt Bredia all usually play a key role in most games. Wide receiver Deebo Samuel is also brought in sometimes in running plays, so he could be an extra topping like black olives or maybe a little hot sauce.

Tortilla Chips and Salsa – Patrick Mahomes and Travis Kelce
Chips and Salsa don’t have much success on their own but throw them together and they are a perfect snack. When Patrick Mahomes is looking for someone to make a big catch he usually looks Travis Kelce’s way. Ingredients
  • 1/2 cup/120 mL brown sugar
  • 1/4 cup/60 mL paprika
  • 1 tablespoon/15 mL black pepper
  • 1 tablespoon/15 mL salt
  • 1 tablespoon/15 mL chili powder
  • 1 tablespoon/15 mL garlic powder
