I probably missed this as I have been working my rear end off lately and have way too many projects going as well.
I can't recall them flexing a Sunday night game like this as my Lindy's magazine says it was supposed to be next week in Philadelphia.

Oh, we have the Philly one, too! I can't remember what the shitty game they replaced was, but we were the best choice available for this week.

They flex SNF so they can easily put the best game in prime time, and they want Sunday night to be the marquee game of the week, not Monday night. With MNF they are basically locked in, so if the matchup that looked great before the season turns out to be a dog, oh well, at least we gave you a great matchup on SNF.
