I've never even heard of coconut flour. Sounds good though.

Exactly. I was going to try those pancakes but they're a little too rich for me.
But at $4.55/lb it's cheap compared to these:
$8.12/lb

Actually, my wife mixes Almond flour with Coconut flour to make pancakes. Not only is the taste amazing, but if you've got small kids they won't go nutz like they will after eating Wheat flour, which sends their sugar levels through roof.

She made Coconut flour cake for my sons birthday and we didn't have a big freak-out amongst the children after all the cake. Besides, the cake was awesome. And it's so much healthier for you. Great way to still get to eat sweets and not get fat.

Also, I don't think we pay anything near those prices for Almond/Coconut flour, but then I'm not sure. We do buy a different brand, however.

Well, I'd have to get over my aversion to eating healthy (ugh!) foods first. :cautious:

Actually, we eat pancakes most every Sunday morning and my daughter cleans the bathrooms after breakfast as part of her chores. I'm not sure it would be a good thing for her to have any less energy than she already exhibits. :ROFLMAO:

Pancakes without blueberries are like the Rams without horns.

I always put blueberries in my pancakes when blueberries are in season. Good stuff.

Agree. That's why I don't make pancakes when blueberries are out of season.

In the winter, my wife and I spread homemade blueberry preserves on our pancakes (my daughter prefers maple syrup) with freshly made whipped cream. Not as good but certainly a suitable sub. (y)

Does it taste like coconut, or is it neutral in taste.
I cook every day, yet never heard of coconut flour.
Sounds great.
