So - any pepper heads out there? I'm in the process of making a hot pepper extract with Chinese Red Pepper (no variety listed). My last one was with Jolokia but I'm trying to see what kind of heat I can get out of a pepper product that costs $7 per pound instead of $80.

Just wondering if anyone else has tried this.

The method:

Take a quart jar and fill with ground chili pepper of your choice. Fill the jar with grain alcohol and cap tightly. Put on a shelf away from sunlight and every day or so shake gently. After a few weeks - longer if patient or lazy - pour mixture through cheese cloth and then coffee filter. Take that "tincture" and either put on a hot plate at warm, a hot water bath, or under a heat lamp to evaporate off the alcohol.

How much alcohol to evaporate off is up to you but the more you get rid of, the hotter it gets and the less alcohol flavor you have. I generally will watch until the evaporation really slows down - about 1/8 the original volume.

Let me tell you - the Jolokia extract I did is screaming hot. You can dip a toothpick in it about an inch deep, swirl that around in a margarita and it is one spicy SOB. Or you can take that toothpick and wipe it on a large flour tortilla, make a burrito and you have a very hot burrito.

It's a great party favor too if you have some people who like to brag about eating hot stuff. But be careful. It seriously is hot enough to give some people medical issues. And ANYTIME you handle it - be VERY careful as even touching your skin with it will burn - sometimes for several days.

Anyway, just wondering if anyone has tried something like this or would want to and tell me their results.

Pepper extract is nothing to play around with. A Jolokia pepper all on it's own would be far too hot for most people, the extract would just be insane.

I really love hot hot food. One of my buddies and I used to go out in search of the world's hottest chicken wings. Our standard order would amount to telling the waitress that we wanted the cook to laugh about the thought of someone actually biting into one the the wings due to the extreme heat they would generate. Most of the time that order would result in a semi hot wing. However,,, there were 2 separate times that we both had our eyes and mouths burning with fire after challenging the cook in this way... both times, pepper extract was involved. Both cooks used eye droppers to measure out the tiny bit of extract needed to make the sauce almost unbearable.

What a pussy. I had a scorpion chili margarita the other night and though I couldn't finish the whole thing, it had WAY more chili than that little piece and the scorpion is hotter than a Ghost chili (Bhut Jolokia). Not saying the guy should have been able to comfortably eat that piece of chili but the reaction is way over the top for someone who supposedly can eat Habaneros whole.

Freaking Drama Haole! :D

Nope. That was a first. I had one before and drank the whole thing. I must have been in spice pussy mode. Still - I am sure I could have finished it if I felt like being in extreme pain for a while. As it was, I was hiccupping and burping for about a half hour. Try one some time. That's some serious heat.

I went to a craft beer festival where one of the beers had habanero in it....that was the first time I think I've ever tossed beer in the trash.

Anyway, never tried the extract. I ordered some hot pepper seeds last summer, but not many germinated. My plan next summer is to buy a lot more super hots to fill my garden. This year I got so many jalapenos that I now have enough canned to last me a really long time.

That scorpion pepper must've been a burner then. I had to give you shit about it though.

Lately, Cammy and I both have been enjoying minced fresh habanero and jalapeno in our magaritas. I do take the seeds and membranes out of the habs, but not the jalapenos. I put 3 of each in the food processor and mince them down to tiny bits. We then add the minced peps into the blender before starting the entire blending process. Lots Don Julio of course for the magic, along with a frozen Bacardi magarita mixer thing (you get them in the freezer section). We also add a little agave. Run that blender until the ice is turned into pure smoothness. I rim my glass with ground cayenne instead of salt.

Bam. Beware of the brain freeze.

Apparently you can get Scorpion chili seeds. And Phx got hold of some Carolina Reapers. If you can grow Jalapenos, you should be able to grow the others. I'd try it but they really won't do well here.

There's a couple places you can buy most anything. I just need to do a soil test next year because my plants got a bit bushy and started out not very hot. I think it's a fertilizer thing.

A friend of mine grows peppers and loves them extra hot. He buries a book of matches underneath each of his young plants and swears that the sulphur makes the peppers not only turn out way hotter, but he says the plants actually produce more peppers too.
