Here they are taken off the smoker. I wrap them in foil for about an hour or so before serving.

Can you get those sittin chicken thingies at a walmart or target or do you go on line for them? Better than a can I'd think!

I've seen them at a couple different outdoor grill stores. You might have your best luck finding them online. I know there is a YouTube video for Sittin Chicken... maybe start there.

J doubt you have too much trouble finding them.

The sittin chicken idea has been around awhile. Weber makes a really good one because it's non stick and has a nice chamber to put liquids and other goodies in for flavor.

I think mine is back home.....

For those of you who may not be aware... your cooking skills are enhanced if you have a nice buzz.

Here's what I decided should be the first step in what I cooked yesterday.

Key ingredients

1 - Don Julio Tequila

2 - Your favorite frozen margarita mix

3 - 2 Tablespoons of chopped fresh Jalapeno and Habanero peppers

My wife bought a Fred Flintstone size pork tenderloin from Costco on Friday. So here's what I did.

I marinaded this monster in a teriyaki Hawaiian Poke style sauce for over 24 hours. Then I injected it with some Cajun shit.

Then I coated it with some steak seasoning.

After about 30 minutes cooking at 350 on INDIRECT heat. I do let it heat up to about 400 - 450 for a few minutes at about 15 minutes.

This is after flipping the pork and letting it for another 15 minutes. I add in some pineapple coated with cayenne pepper. Cook for another 20 minutes or so.

Take it off the grill and put it in a tupperware or cover with foil for at least 15 minutes.

I put it all back in the container it rested in and add some Poke sauce on top. My Island Roots be showing here. Gotta have some quality rice with this.

I like the idea of grilled pineapple with cayenne on it. I have done that with watermelon, but not pineapple. Thinking some fruit kabobs as a side dish to some ribs and corn bread be a nice way to start my grilling season. If it eveR stops snowing that is. Have 2 more storms headed our way this week LMAO

It's a really good combo. Let the cayenne sit on the pineapple for a few hours at least. You gotta use fresh pineapple! Clean it yourself.

Give it a nice coat of olive oil before grilling.

Yeah fruit with high sugar content will essentially weld itself onto the grill if you don't coat it well with oil LOL.

True story.............per request years ago while cooking out with several friends I grilled some big thick watermelon slices on the Weber S-670 I still have back in Ohio (badazz grill Google it) and man I ended up just scraping that shit off and throwing it into the grass for the ants to enjoy.

The grill has a really large surface so it was an entire melon. Ruined.

So tonight I'm doing Chicken Tenders as a side snack as well as asparagus and some strip streaks.

Tenders -

brine - 24 cups of water, 5 cups of apple juice , 1/2 cup of kosher salt...1 hour in fridge after at room temp

different flavors: bbq, kick 'n chicken, smokehouse maple, maple/bbq, garlic powder on all

Attempting a salmon for the first time on the smoker... looked around the web and came up with my own version

Beverage:
Erath Pinot Noir

Wood chips: Cherry

Brine:

24 cups water, 8 cups apple juice, 1 cup light brown sugar, 1/2 cup maple syrup

2.5-3 hour soak

Let it dry

Rub a coat of maple syrup on each side, season with garlic powder, smoke house maple , brown sugar

Set smoker to 210-215 (it fluxates within 10 degree, so it'll go 205 to 225) ..

I can't even begin to tell you how much this thread is making me crave BBQ. Right now my grill is under like 7 and a half feet of snow. Plus, the BBQ places in RI leave a bit to be desired.

I don't even know why I opened the damn thread to begin with, it's just driving me up the wall

jot down the recipes, save with pics in a word document, experiment come summer/football season ;)

new place just opened up in Gansett, Hanks Down South BBQ. I have heard some decent things about the food, but in an area that specializes in seafood, I am skeptical !!
